Here is a Saint-Marcellin-based recipe for a gourmet starter that can even serve as a light dish.

Ingredients for 4 persons :

  • 300 g of saint-marcellin
  • 15 cl of liquid cream (30% fat)
  • 3 eggs
  • 1 pinch of nutmeg
  • 15g butter
  • 2 tbsp. tablespoon of parsley
  • 2 tbsp. tablespoon of deerl
  • 2 tbsp. tablespoon of chive
  • 60 g of mesclun
  • 12 kernels nuts
  • Salt, freshly ground pepper

For the vinaigrette:

  • 1 tbsp. sherry vinegar
  • 3 tbsp. tablespoon nut oil
  • Salt, freshly ground pepper

Recipe for flank of Saint-Marcellin, herb salad

Preheat the oven to 160 ° C (th. 5/6).

  • Place the Saint-Marcellin in a salad bowl, crush it with a fork.
  • Pour in the cream, incorporate 1 whole egg and 2 yolks.
  • Season with salt, pepper and nutmeg.
  • Mix well.

Melt the butter, brush the inside of 4 ramekins with a brush, distribute the contents of the salad bowl. Bake for 35 minutes in a bain-marie.

Wash the herbs. Remove the leaves from the parsley and chervil. Chop the chives.

Wash and wring out the mesclun. Mix it with the herbs.

For the vinaigrette:

In a bowl,

  • Pour in the vinegar, season with salt and pepper.
  • Mix and gradually incorporate the walnut oil, emulsifying with a small whisk.

Pour the dressing over the herb salad. Mix.

Unmold the flans on plates, place the herb salad around, garnish with walnut kernels.
